Kitchener Naturopath shares recipe for Chickpea Salad

Chickpea Salad

This is a great dish to accompany grilled meat, chicken or fish on the BBQ!


1 can chickpeas (19 oz.), drained and rinsed

¼ cup cilantro, chopped or substitute fresh parsley

¼ cup red onion, finely chopped

½ red pepper, chopped

1 large clove garlic, minced

3 Tablespoons lemon juice

2 Tablespoons olive oil

Cayenne pepper, to taste


Combine all ingredients together and toss well.

Taste for seasoning.

Let the salad stand for approximately 1 hour, then serve.
