KW Naturopath shares recipe for Fresh Tomato Salsa

Fresh Tomato Salsa

This salsa is bursting with freshness and vibrant flavour.  It’s so quick to make and can be enjoyed with chicken, fish, burgers and pork chops.

A little tablespoon of any condiment, whether ketchup or salsa, can’t supply much in the way of nutrients.  But in larger portions, the vegetables and fruits in any salsa can supply a wide range of antioxidant vitamins, natural phytochemicals (such as lycopene in tomatoes), and the mineral potassium which is in short supply in our diets today.

Ingredients

  • 2 plum tomatoes, diced
  • ¼ cup fresh coriander, chopped
  • 1 jalapeno pepper, minced
  • 1 green onion, finely chopped
  • 1 tbsp lime juice or wine vinegar
  • 1 tbsp vegetable oil
  • ¼ tsp salt
  • ¼ tsp pepper

Preparation

In bowl, stir together tomatoes, coriander, jalapeno pepper, green onion, lime juice, oil, salt and pepper.
